As I’ve talked about in previous posts, my big little guy can eat-like a lot. Outside of purchasing stock in my local grocery store I decided I need to do something to keep the hungry beast under control. I try my best to use whatever I have on hand, and I just happened to have oatmeal and a whole bag of chocolate chips in my pantry. I adapted this recipe from one I found on Allrecipies.com and adapted so it’s gluten free so I can eat it. Ike could care less, but I like cookies.
3 cups of (gluten free) oats
1 cup of flour (1 cup gf flower, if it already has zantham gum do not add any more, if it does not add 1 ½ tsp)
1 tsp of baking powder
¾ cups brown sugar
¼ cups white sugar
¾ cup of butter
¼ cup of oil
1tsp of vanilla
1 12 oz bag of chocolate chips
¼ cup of chocolate chips of your choice
2 eggs
Pre-heat oven to 350 degrees. Mix your dry ingredient together in a bowl, , zanthum gum, baking powder, sugars, in a separate bowl combine all wet ingrddienys then mix together until blended. Once all are blended fold in oats then fold in chocolate chips.
I would suggest putting your dough in the fridge for an hour so its more stable when baking. I use a very small 20z scooper (hence the name bite) and place 9-12 on a cookie sheet lined with parchment. Bake for 8-10 minutes or until golden brown around the edges.Batter makes at least 4 dozen cookies.
